I actually wondered the same thing a while back – being obsessive-compulsive I looked it up and…sure enough, the ‘skin’ is okay to eat. If I recall correctly, brie doesn’t start life with the skin – is a natural mold that grows on it. Yummy!

actually thinking about it as mold makes it much less appetizing though!
ever notice how many productas out there suddenly become very un-appetizing when you know what they involve or are made of?? :eek:
