Got oil changed then this..

went and got the oil changed and now the engine light is on and solid

then you checked the oil and it's level was....

Did they check/change the air filter? Could be a sensor or vacuum line came loose or didn't get put back on all the way. Either take it back to where you had the oil changed and have them look it over or, if they can't fix it or scan it, take it to an auto parts store that can scan the code for free. It's a common misconception that the CEL will come on if your oil is low or needs to be changed, but that's usually not the problem, especially if the low oil pressure light isn't on.

I'd imagine they forgot to plug in one of the intake sensors (the MAF sensor and the air intake temperature sensor are commonly forgotten)

Easiest way - just go to AutoZone, Strauss or a car place closest, get the code read and google it and find what's the problem. May be something simple.

My 05 LX has a maintenance minder light that comes on. It may not have the odometer readout that tells you which maintenance is due (like my '06 Pilot had) - but it does have a light that comes on and annoys the heck out of you when it thinks you're overdue for maintenance....

That is not the "maintenance minder" system. It is a mantenance reminder, but it comes on at an odometer interval. The maintenance minder that came on 06 and up Accords actually takes into account how it is being driven to determine the service interval and also shows you oil life percentage.
