I've been using the search function and manually scanning the forum but I must be more useless than I thought. I have stumbled across lots of great content, DIYs and stickies but not about replacing the compressor. I did find a couple on youtube but nothing that gives me a warm & fuzzy.

Or if I just go buy a shop manual, is it a job that's do-able without a hoist?

Get the factory service manual. The PDF for the 8th gen and the V6 supplement is on this forum somewhere.

Since the v6 engine hasn't changed much from the 7th gen and the location of ac compressor is the same, review some of the 7th gen ac compressor replacement.

I just replaced mine last week on 7th gen v6. Make sure you get a new drier. I wrote up some learnings from my own experience and posted in 7th gen forum.
